Mango Cherry Salsa Chicken
Sorry I haven’t put up any new posts or my grocery list this last week. In fact I didn’t think my list was true to the challenge. My deep freeze decided to randomly defrost. I had 30 lbs of chicken, 8 lbs of ground meat, frozen veggies and frozen fruit that all completely defrosted so we are eating a lot of meat and frozen veggies this week. I will get back to the grocery lists next week.
In the mean time I used some of my chicken to make this delicious Mango Cherry Salsa Chicken. It was simple and quick. I cooked the chicken in the crockpot with the other 30 lbs. The chicken was cooked unflavored to I added a little salt to it when it was heated up. I shredded when I reheated it and I loved having it shredded.
You will need
4 Chicken Breast ( 1 per adult)
2 Large Mangos
1 lb of Cherries
1 bunch of cilantro
2 Limes
Pinch of salt
Sprinkle chicken with lime zest and salt. Cook the chicken 375 for 25 min. Peel and dice the mango, put it a bowl. Remove the pit from the cherries and add them to the bowl. Chop the cilantro, no stems, and add. Juice the two limes and pour it on the fruit. Take a small handful of the salsa and puree to add a sauce over your chicken.
Now doesn’t that look appetizing.
